Salads are in - delicious to eat, yet healthy and nutritious with lots of fresh, crunchy fruit vegetable to ring the changes. Long forgotten are the salads where tedious limp lettuce highlighted only by flabby cucumber (often made even soggier by an uninspired dressing) was the only prospect. Now a new generation of salads feature a variety of fresh and crunchy ingredients dressed with imagination and flair to provide light and refreshing main meals. Typical autumnal and winter vegetables also come into their own in salads. Other valuable ingredients such as fish, cooked meats and cheese add even more variety - and then of course there's rice. This splendid grain not only helps satisfy the appetite but also provides another texture to a salad for even more interesting eating. |
