The Sichaun region in Western China is known as the Land of Abundance. The Fruit and Vegetable basket of America is the description given to California. Both areas are situated in the West of their countries and both are blessed with fertile soils that give life to a myriad of crops. Is it any wonder therefore that of the Chinese who chose to emigrate, California was the destination of choice for those from the western regions? Here they found a familiarity that eased their assimilation into a new world. And the land that welcomed them was enriched by a new cuisine - Sichuan!
