Hearty portions and well spiced - this is how they like their food in the USA's south west. Typical regional cuisine of Texas, Arizona and New Mexico is a result of the culinary influences of both their ethnic and indigenous inhabitants and close neighbours - Tex Mex being the name of this delicious medley of dishes found in this region. Characteristic ingredients include chilli peppers, avocados, beef, sweetcorn, beans and rice - Texas is in fact one of the seven USA states in which rice is grown. And whether a hot chilli con carne, al fresco barbecue or tasty tortillas are on the menu, rice is always one of the ingredients, absorbing some of the spiciness as a side serving or blending harmoniously with the hot flavours of the main dish.
